Easy Mexican Bowl

You can easily swap out ingredients for this recipe to make it fit your taste. Try swapping out rice for cauliflower rice, using ground turkey or steak instead of chicken, or add more vegetables, like bell peppers or lettuce. The options are endless!

Easy Mexican Bowl Ingredients

(4 Servings)

• 1lb Boneless Skinless Chicken Breast
• 2tb Taco Seasoning
• 2c Rice (I used Basmati)
• 1 (15oz) Pinto Beans
• 8oz Pico De Gallo
• 1c Reduced Fat Mexican Cheese
• Fat Free Sour Cream
• 1 Avocado
• Green Onions to top

How To Make A Mexican Bowl

What makes this recipe so great is that the ingredients can be kept separate or combined and it still tastes great the next day. The only thing I would recommend cutting fresh before eating is the avocado to avoid it from browning.

You first want to prepare the chicken by removing any access fat. Then you want to cut it into small pieces by slicing it vertically and then horizontally into even smaller pieces.
Place chicken into a skillet that has been preheated on medium heat. Once chicken is cooked all the way through, stir in 2-3tbsp of taco seasoning and about 1/4c of water and cover. Cook for a couple minutes, then turn heat down to simmer. While chicken is cooking, cook rice, chop green onions, and slice avocado. Combine all ingredients into bowl and enjoy!
